Construction on the new Winery here at Ancre Hill Estates began this week. The project should be finished by August 2014 and operational for the 2014 harvest. The building will be a state of the art facility allowing non-interventionist winemaking, in line with DEMETER winemaking standards. It will employ many ecological technologies to keep the estates’ carbon footprint to a minimum, including a grass and sedum roof, straw-bale walls and ecological water treatment that will provide the vineyard with the raw materials for its plant tisanes.
